Need another breakfast option? This lukewarm salad is virtually for everyone: vegans, vegetarians, no lactose and no gluten, no refined sugars nor processed carbs. And it provides you with lots of energy after (or before) your next workout.
Ingredients for one person
- 5-6 spinach leaves
- 3 tea spoons boiled peas
- 1 green paprika, sliced and diced
- 1 small avocado
- infused Gyokuro leaves
- salt or gomasio
Preparation
If you use fresh peas and paprika, feel free to cook them in the same pot you are using to steam the spinach. The spinach will need around 15 min, while the peas only need 7, so make sure to add them a bit later.
While the vegetables are cooking, you can already slice and dice the avocado.
Add everything into your favourite salad bowl, cover with your Gyokuro leaves, add salt and olive or sesame oil.
Sit down, breath in and enjoy!
